Stuffed Chicken:
6 chicken breasts
6oz roasted red peppers, coarsely chopped
handful of spinach
1 big shallot, cut into rings
2 garlic cloves, minced
salt & pepper
-tenderize 6 chicken breasts and season with salt & pepper
-layer 3 chicken breasts in a baking pan
-add spinach, coarsely chopped red peppers, shallots cut into rings, and minced garlic.
-add last 3 chicken breasts as top layer.
-bake at 375°F until chicken is cooked (sorry, I forgot to keep track of time)

Unfortunately, my shallots went pass the caramelized stage into teeny tiniest burned. Hahaha! Whoops! But it's still edible, and not all of them are at that stage. I really ought to pay more attention though.
